Common Problems
The classic call we get: "the lights are on, but the fridge is not functioning." On True and Turbo Air reach-ins that usually points to the compressor, its start relay, or the temperature control - True thermostats fail often enough that we carry the diagnosis logic in our heads. A P1 code on a True display is the thermostat sensor. We test before we replace anything.
A machine that makes one or two batches and stops is telling you about water, not ice: clogged water filters, scale in the fill tube, a float switch reading empty. Hollow or thin cubes point at low refrigerant or a leaking hot-gas valve. Hoshizaki, Scotsman, Manitowoc - each has its own habits, and we know them.
When a walk-in loses part of its R-404A charge, the blend itself changes - pressures look "fine" but the coil ices over and the box runs warm. Topping it off makes it worse. The right fix is finding the leak, full recovery, vacuum, and a fresh charge. Door gaskets and defrost settings get checked too - half of icing problems start there.
If the health inspector's thermometer reads above 41F, that's a violation - and spoiled product on top. Display and deli cases usually come down to condenser airflow, evaporator fans, or a defrost cycle set wrong by the last "specialist." We set controllers the way the manufacturer intended.
